Soup of the Week – Chicken Soup of Necessity
If you’re waiting for the spicy butternut and vegetable “stoup” recipe I promised, it’s still coming.
But this week I made homemade chicken noodle soup because it was necessary. The Fab Hub is sick. (Again.)
Normally, the man has the immune system of steel. He rarely gets sick and when he does, it’s like 24-hour death and then it’s over.
But he’s in a new job which means a new environment and new germs. And that environment happens to be an elementary school. Oh, and his job happens to be one that often requires him to handle the mobile devices used by all of those elementary school children. And everybody knows that elementary school children are like very cute yet very disgusting little walking germs.
And so this week we had homemade chicken noodle soup because what better for a nasty cold than homemade chicken soup? Your grandmother knew what she was talking about when she called it homemade penicillin.

So why chicken soup of necessity? Well, because in addition to being sick, my Hub is also stubborn. You see, he won’t admit that he’s sick. And he certainly won’t drink the sick tea* I offer him because he thinks it tastes like feet.
But I made him the sick tea anyway, because it’s good for him and I love him. I don’t honestly know if he drank it or not. I took it to him in his Hub Cave when he was doing some school work. I do know that the honey, lemon, and garlic combo is liquid magic and I know if he gets that stuff in him, he’ll start to feel better.
Enter the chicken soup.
This is nothing special, really. Just your standard chicken soup – two quarts of homemade chicken broth, chopped carrots, onion, and celery**, some oregano, a few handfuls of egg noodles, a little fresh lime juice, and enough minced garlic to gag a maggot.
There’s more than one way to skin a cat.
The Hub is on the mend, by the way. But if you ask him, he wasn’t really sick in the first place. It’s just allergies. (Ahem. OK.) But you know, sometimes in marriage we just have to agree to disagree about whether or not one’s wife was right.
And the spicy butternut and vegetable recipe is yet to come – it’s on the menu plan for the week. In the meantime, I’m going to grab another cup of home remedy love and head to bed so I don’t end up getting a full-blown version of the Hub’s germs.

Homemade chicken soup is one of my all time favorites. It just says love. Yours looks like heaven! Do you make a huge batch of chicken broth and freeze it for future use? Seems like you are always good to go on these soup projects. I need to perfect that skill.

I absolutely do make a huge batch of chicken broth and freeze it. I also make vegetable broth and freeze that (not necessarily at the same time, of course).
When I get low on chicken broth, I buy a little roaster, make a chicken for dinner, and go to work. I usually get about 4-5 quarts and maybe 2-3 single cup containers out of a batch of broth. Plus chicken leftovers for lunch or another meal – bonus!
For the veggie broth, I just keep my vegetable scraps in the freezer until I have a full gallon freezer bag and do basically the same thing.
I do keep the boxed organic broth from our market on hand – one chicken, one veg, one beef – for various things, but I really like having the homemade stuff ready to go for just such occasions.

Thanks, Anita. Chicken soup cures anything – especially with extra garlic! And the weather change is absolutely a culprit. Our weather here can’t make up its mind – 60 degrees one day, 30 the next and then all over again.
I made some CNS the week of Tgiving, but I think my stock was just way too weak (too much water when I made it?), so it was really fairly bland.
