A Snack that Delivers
Ever come home in the afternoon ravenous? Dinner is still way too far away to wait but you need food like now? And you’re the kind of hungry where pretty much anything will work?
Try this…
It is seriously good. And it was completely accidental.
I grabbed a couple of Wasa rye crackers and topped them with some herbed feta mixed with Neufchatel cheese because I had just a little bit of both left. The feta is a little strong by itself and the Neufchatel is a little plain. So…perfect. I tossed a few of my fresh cherries on top and added a few turns of freshly ground pepper.
It was impulsive. And it was awesome. So awesome we had it again on Saturday. On purpose.
It was just enough to keep me from eating the entire kitchen before dinner happened. And it’s relatively healthy, too – a definite plus. And if your cherries happen to match your pepper mill?
Even better.
Sweet cherries plus salty cheese sounds really good.
Exactly – it was the combination, I think, that made it so good. And the black pepper? Just that little something extra.
Now I’m hungry.
You gotta try it! Also good on top? Cucumbers. Tomatoes. Or…pretty much anything.
