Three Degrees of Avocado
Ever sit down to do something on your computer, click open the Internet, and find, amazingly, that you’ve travelled somewhere wonderful without quite realizing how you got there? Happens to me all the time. It’s one of the curses blessings of having ADHD. (More on that another time…)
Anyway, the other day, I was poking around on some sites I enjoy, blissfully unaware of what my original intent was, and clicked on the blogroll over at Eat, Live, Run. One of the sites listed there was How Sweet It Is and I soon found myself staring transfixed at a photo of avocado toast. (Go ahead, click that…you’ll see why.) That sent me over to A Cup of Jo, where I found the instructions for how to make this snack of happiness. OK, good to know. Filed it away for future reference.
But I love good food. And that image positively haunted me. Been thinking about it ever since.
This morning, I found an avocado that needed to be put out of its misery. Avocados don’t last long around here…my daughter and I usually scarf them up right away with just about everything. But here was one lonely soldier, lost among the other produce in my fridge. Then I remembered that post. AHA! I followed the instructions with one minor alteration: rubbed some fresh garlic on my freshly-toasted whole grain wheat bread before I spread the avocado on top. Oh my! It was light and flavorful and happy and green…just what I was looking for! And my poor forgotten avocado soldier has now served a valiant cause. My work here is done.
