TToT – Bring on Summer!
Last week I started a second TToT and then…life happened. Always. I decided to just grab the items I had on there and bring them along to this week’s list. So let’s just get right to business…
It came to my attention last weekend that the Fab Hub did not get nearly enough of a mention in the Birthday TToT post and he really should have. If you ask him, he’ll probably tell you that my list should always be about him times ten. In all seriousness, though, the Hub needs to be on my list of thankfuls.
First, simply because he puts up with me. In general, I’m a handful. But in weeks where I am miserable and moody and emotionally wrecked? He deserves a medal. And in the week leading up to the Birthday TToT (OK and this week) I was way stressed and all of those things. I am thankful that he didn’t send me packing to my Mother’s.
In addition to putting up with me, I am thankful to my Fab Hub for really sitting with me, talking and really listening to me on several occasions this week. While he couldn’t change the things that were concerning me, seeing him be sincerely and completely interested and having him focus completely on what I was saying and offering his ear and his wisdom were beyond measure.
I am also quite glad that he (finally) cleaned the coffee pot. His coffee is once again the most perfect cup you’ll find anywhere. Huzzah!
I watched Zilla and her Fab Dad play together last Saturday. They were enjoying their common love of Star Wars themed Lego building sets. I love that they share interests. I love that they can spend time together like that. I’m very thankful that they have a close relationship. Who knows why? Maybe it’s because he got to hold her and be with her so much when she was an infant. Maybe it’s because they are just two peas in a pod. Whatever it is, I’ll take it.
I am thankful that our wine-soaked chicken sandwiches turned out well – again. These were a great no-effort meal for our Saturday evening.
Looking at the photo, though, I’m kind of wishing I had added something green to that sandwich. I have some awesome pickled jalapeños that might have done just the trick. That cheese could have been a whole lot meltier, too. Oh, well, they tasted delicious so no regrets. Next time I’ll try and remember those jalapeños. Or some pickled peppadews – my new favorite thing to put on everything.
I am thankful – finally – for the end of the school year. The last full day of classes has come and gone. Now we have a week of short days for exams and book collection and other such wrap-up and we’re done! So one more week of that and we are finished!
CSA season began this week. Our first pickup brought loads of greens to our kitchen – kale, arugula, salad greens,
and something called Asian spinach mix (also listed as “braising greens” in our CSA e-mail update).
We also have some very small heads of broccoli, some bok choy, Hakurei turnips, and French breakfast radishes.
We loved the CSA deliveries last year. I particularly like them because for me it’s Lazy Girl’s Menu Planning. I don’t have to think about what’s in season or what to buy – the vegetables just show up and all I have to do is figure out how to prepare them. I love it.
This week we had some days of completely perfect late spring weather. Today is another one. It is actually a perfect day to be at the mountain, but we had other things on the agenda and I’m not sure my body is up to a hike today. We’re enjoying the sunshine and beautiful temperatures from our deck today instead.
I was thankful to have transplanted several herb plants this week. I loved having the fresh herbs right out on the deck last year…but I’m not sure everyone is going to make it. The cilantro is already history. The parsley and basil are struggling to recover. The mint may survive and the chives actually look pretty great. The jury is still out on the Rosemary…we’ll see how this goes. I may just have to buy some seeds and start over on a few. Zilla and I have some flower seeds to take care of this weekend, too, so we’ll just save all of this detail for another post of its own. I have to start posting something besides TToTs!
Should I be thankful for what I think was another message to me this morning? This mug almost never comes out of our cupboard…
And finally, because I think I’m at ten by now, I am thankful to have seen this beautiful sky from our back window the other night…
Normally, I would’ve headed out on the deck to grab the shot without the screen in the way, but Zilla and I were upstairs in one of the bedrooms and I knew the angle would not have been as good from downstairs. The Fab Hub likes the second shot better – the screen is less noticeable and you can see a bit more of the thunderhead in the sky – but I think the fiery effect of the sunset is a bit better in the first shot. Either way, it was a glorious sight and while the photos are pretty good, they really don’t do the beauty of that scene proper justice. In the end, I’m thankful to have captured this on film, but also that Zilla and I saw it together. Plus, we were just sitting on the floor together quietly watching what was happening out the back window. Those precious moments are most definitely ones for which I am thankful.

Soggy purple sandwiches…hrm. Definitely not red wine! I just dumped about half of a bottle of whatever white was left from something – it worked.

Oh, I am so glad regular schooldays are done for you! That’s a load off, huh? I bought slo-bolt cilantro seeds this year. So far, so good. My poor rosemary has fallen victim to Leo. Who knows if he will let it actually grow?
I love CSAs for the same reason, but I didn’t do the spring/summer one because we’ll be out of town at times this summer. Fortunately, we always have the farmer’s market at our neighborhood park.
I hope this next week goes smoothly, and then you get to RELAX!
I can’t tell you what a weight off my shoulders the end of classes is for me right now. I am definitely looking forward to the very end!

He really is! And the veggies are quite good. We had such a bounty last year and so many great new things to try. I’m really looking forward to seeing what this year brings!

It was great – made what was otherwise a not so interesting leftover chicken breast very delicious and very useable.
The sunset was amazing – looked like the sky was on fire.
And I am SO excited for the CSA deliveries – not that we don’t get fresh vegetables all the time even without it, but I love that somebody else does the thinking.

What is a peppadew?
Peppadew is actually a brand name for a particular kind of sweet piquanté peppers (red) from South Africa. They are sweet and with not much heat as far as peppers go. Small – like the size of a decent cherry tomato. I mostly see them pickled. They are awesome on pretty much anything.
This was a wonderful post. I read your weeks of moodiness, ect and started thinking, wow, maybe my fiance deserves a medal also for putting up with me. 🙂 Loved your photos, especially the gorgeous sky at sunset. Aren’t little moments like that the closest to perfection ever. Have a great week.

I too am SO thankful that you have such a FAB hub to be there with you – I mean REALLY really with you, in your time of need. Oh how thankful I am for that!
What is CSA? Did I miss something about it? The vegies look amazing! You need to provide recipes and I need a ‘no brainer- don’t do much in the kitchen’ map please!
CSA – Community Supported Agriculture. Members pay for a share in a local farm and each week we get AWESOME fresh, organic veggies. There will be recipes – no worries there. The fees help fund the farm and in short it’s a good thing all around. Last summer I think I ended up doing an almost weekly post on the CSA stuff – or at least a mention of it somewhere – and the recipes will show up probably more than anyone cares to read. 😀
I’ll tell you what – this period of not-so-fun that we’re working through with him switching careers has brought us much closer in a lot of ways. While we certainly would not have chosen this path on our own, we can definitely see some positives that have emerged. Of course, we’d still really like for him to get a new job and get this new career phase moving along…
